The three-hat Bilson's is a fine dining restaurant created by one of the city's most celebrated chefs, Tony Bilson. Bilson's is one of only seven establishments among Sydney restaurants to achieve three-hats, and is the only three-hat restaurant in a major Sydney five-star hotel. Located on the ground floor overlooking bustling Pitt Street and framed by tall arched Georgian windows, Bilson's emphasizes French cooking techniques and tastes. A private dining room is also available.
